2 cups low-sodium beef or chicken broth
1 can canned diced tomatoes (undrained)
1 medium onion (chopped)
2 cloves garlic (minced)
2 bell peppers (any color, chopped)
1 tbsp dried Italian seasoning
1/2 tsp red pepper flakes (optional)

Instructions
Prep Your Ingredients: Before I even turn on the stove, I make sure all my vegetables are chopped and my beef Italian sausage is removed from its casing (if using links) and ready to crumble.
Brown the Sausage: Place a large, oven-safe pan over medium-high heat. Add the beef Italian sausage, breaking it up with a spoon as it cooks. Let it brown nicely, stirring occasionally, for about 5-7 minutes.
Sauté the Aromatics: Add the chopped onion and bell peppers to the pan with the sausage. Cook them, stirring, until they start to soften, about 5-7 minutes. Stir in the minced garlic and cook for just another minute until fragrant.
Toast the Rice: Add the uncooked rice directly into the pan with the sausage and vegetables. Stir it around for about 1-2 minutes, letting it toast lightly in the residual fat.
Add Liquids and Seasonings: Pour in the beef or chicken broth and the canned diced tomatoes. Stir in the Italian seasoning, red pepper flakes (if using), and a good pinch of salt and black pepper. Bring the mixture to a gentle simmer.
Cover and Cook: Once simmering, reduce the heat to low, cover the pan tightly with a lid, and let it cook undisturbed for about 18-20 minutes.
Rest and Serve: Once the rice is cooked, remove the pan from the heat and let it sit, still covered, for another 5-10 minutes. Remove the lid, fluff the rice gently with a fork, and serve it hot, topped with freshly grated cheese and a sprinkle of fresh herbs.
