1 cup cottage cheese (preferably low-fat or full-fat)
3 large eggs
1 cup rolled oats (can use quick oats)
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 tablespoon honey or maple syrup (optional, adjust for sweetness)
1 teaspoon vanilla extract
1 pinch salt
cooking spray or oil/butter (for the pan)
Instructions
Gather all the ingredients in a large bowl. Make sure the cottage cheese is well-drained.
Add the cottage cheese, eggs, oats, baking powder, cinnamon, honey or maple syrup, vanilla extract, and a pinch of salt to the bowl. Mix everything thoroughly until you have a homogeneous mixture.
Heat a non-stick skillet over medium heat and lightly spray it with cooking spray or add a little oil or butter.
Use a ladle to pour a portion of the batter into the skillet. Be careful not to place the pancakes too close together. Let them cook for about 3-4 minutes until bubbles form on the surface.
Carefully flip the pancakes with a spatula and cook on the other side for another 2-3 minutes until golden brown.
