Ingredients

Scale
  • 1 pound fresh green asparagus, trimmed
  • 3 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 whole lemon, zested and juiced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes (optional, for a bit of heat)
  • Freshly grated Parmesan cheese (optional, for serving)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat the oven to 220 degrees Celsius.
  2. Wash the asparagus thoroughly and trim the woody ends.
  3. In a large bowl, combine the asparagus with olive oil, minced garlic, lemon juice, lemon zest, sea salt, black pepper, and optional red pepper flakes. Ensure the asparagus is evenly coated with the marinade, which should take about 2-3 minutes.
  4. Spread the marinated asparagus evenly on a baking sheet, making sure the spears are not overlapping for even cooking.
  5. Roast the asparagus in the preheated oven for about 12-15 minutes. Flip the asparagus halfway through cooking for even browning. It should be tender and lightly browned at the end.
  6. Check the asparagus after 12 minutes; it should be crisp yet tender. Avoid overcooking to prevent it from becoming mushy.
  7. Serve the fried asparagus hot, garnished with freshly grated Parmesan and chopped parsley or basil.
